Sweet Potato Muffin
Don’t be scared by the idea of sweet potato in a muffin. This recipes is sweet enough to be dessert but nutritious and filling enough to be a meal. I recommend using a blender to combine the ingredients, however, I did not have one available and used my immersion mixer. It was a bit more difficult to mix as a result and I ended up with some sweet potato chunks in my muffins. This would have been avoided had I used a blender.
How to make a flax egg
For the equivalent of 1 egg: Mix 1 Tablespoon of Mike’s Mix Ground Flax with 3 Tablespoons water. Let sit for 15 minutes before use.
Sweet Potato Muffin with Flax Egg
Ingredients
1 baked sweet potato (if pressed for time, you can peel and microwave a sweet potato for approximately 5 minutes, or until soft throughout to use)
2 bananas
2 flax eggs
2/3 cup peanut butter
6 Tablespoons Real Maple syrup
1 Tablespoon cinnamon
1 Teaspoon ginger
1 Teaspoon Nutmeg
2 teaspoons baking powder
Instructions
Make 2 flax eggs, set aside.
Pre-heat oven to 350 degrees
In a bowl, mash 2 bananas.
Peel and chop up sweet potato, add to bowl.
Add all remaining ingredients to bowl and mix.
Spray a 12 cup muffin tin
Evenly pour mix into muffin tin
Bake for 20 minutes
Let cool in the tin for 5 minutes, move to a rack and let cool
Enjoy!
