This recipe was inspired by a good friend who follows a vegan diet. She was, and is, always looking for ways to vary and increase her protein intake. The result is an easy, delicious, non-time consuming, nutrient rich recipe (whew!) that could fit her vegan needs and be happily consumed by my children (who can be very picky eaters).
With any recipe, I look for one that provides a small margin for error. If there are multiple steps, I am bound to mess it up. This recipe fit my needs perfectly in that it simply consisted of putting ingredients in a bowl, mixing, then transferring to a pan.

I have since made a number of different variations, altering the amount of flax and chia seeds (I eliminated the flax and doubled the chia seeds for one batch) and adding chocolate chips to name a few. Easy and delicious way to get protein on the go. Even better, this recipe can fit the most restricted dietary needs. Vegan, gluten and diary free, there are many substitutions that can be made to fit your tastes. My initial attempt at this recipe was with honey and dried cherries and it was great! They cool nicely and travel well. I was able to get the kids to eat this as well by substituting chocolate chips for the fruit.
Ingredients
- 1/2 cup Mike’s Mix Pure Vegan Protein
- 1/4 cup Mike’s Mix Raw Black Chia Seeds
- 1/4 cup Mike’s Mix Ground Flax Seed
- 1/2 tsp baking soda
- 1 tsp baking powder
- 8 Tbsp water
- 1 cup of dates (or fruit of your choice)
- 3 Tbsp of Honey (this can be substituted with the sugar of your choice, or even eliminated)
Instructions
- Pre-heat oven to 350 degrees
- Combine protein, flax, chia seeds, baking soda and baking powder in a small bowl
- Slowly add water and honey and mix as you do so
- Once mixed together, place batter in a oiled bread loaf pan
- Bake for approximately 20 minutes or until golden brown
- Remove from oven and enjoy!
